Pea jelly is anything but the drink you might think. This is a rather thick dish that sets well and is easily sliced. In Russia in the 18-19 centuries, pea jelly was a very popular street fast food, when served it was often poured with hemp oil. We invite you to try this original Russian, but very unusual dish for modern gourmets.

Ingredients for 6-8 servings

split peas
500 g
water
1.5 L
salt
10 g (2 tsp)
allspice peas
2 g
ground black pepper
1 g (1/6 tsp)
bay leaf
2 pcs.
butter
20 g

Don't wash peas. Put in a saucepan, cover with water. Add allspice peas.

Boil the peas until cooked through for about 1-2 hours or longer. Add the bay leaf 10-15 minutes before the end of cooking. When ready, remove the bay leaf and peppercorns, they can be thrown away.

Salt, pepper, add butter and mix well. Blender or bowl the combine until smooth.
