Ingredients for 2 servings
small zucchini
1 pc.
quail eggs
6-10 pcs.
cherry tomatoes
8-10 pcs.
grated parmesan
to taste
olive oil

Step 1/4
Boil quail eggs and pour cold water over them to make them easier to clean. Clean and cut into halves. Wash all vegetables well. Cut a small part of zucchini into small cubes, grate the rest for Korean carrots or cut with a spiralizer (a device for cutting vegetables and fruits with spiral ribbons of different thickness and width).

Remove the stalk and core with the seeds from the cucumber. Cut the vegetable into small cubes.
Step 3/4
Place the zucchini "spaghetti" on a nest-shaped plate. Put the diced cucumber and zucchini inside. Mix the oil with the lemon juice and pour over the vegetables with this dressing.
Step 4/4
Top with cherry and quail eggs, sprinkle with grated parmesan.
