Ingredients for 2 servings

500-600 g
sweet potato
500 g
boiled corn

honey

olive oil

red hot ground pepper

Step 1/7
Remove the zest from the lemon with a fine grater, squeeze out the juice. Mix the juice with olive oil, beat with a fork, pour half of the mixture into a separate container and save. Add soy sauce, honey, mustard, zest, spices and crushed garlic to the rest, mix.

Dry the ribs with a napkin and pour over the marinade, leave to marinate for half an hour at room temperature.

Peel the pumpkin, wash the yam (you don't have to peel it), cut the vegetables into small cubes.

Cut boiled corn into thick circles, peel red onions and cut into large feathers.

Preheat the oven to 180 degrees. Put yam and pumpkin on a baking sheet, pour the mixture of oil and lemon juice, salt, mix and put to bake.

Wrap the ribs in foil and also place in the oven to the vegetables, bake for 40 minutes. Add onions and corn to vegetables, mix with sweet potato and pumpkin with a spatula so that the oil is evenly distributed.

Gently unroll the foil so the ribs can brown. Increase the temperature to 200 degrees and cook for another 15-20 minutes. Carefully put the finished ribs on a plate, serve with vegetables. Bon appetit!
