"Watermelon Gazpacho" recipe
Ingredients for 2-3 servings
watermelon red
2 kg
sweet red pepper
2 pcs.
onion red
20-30 g
garlic
1 clove
baguette or ciabatta
50-60g
olive oil
1-2 tbsp. spoons
salt
optional and to taste
basil
pair of twigs + to serve
lime
0.5 pcs. Or taste
Step 1/6
Cut the crusts off the watermelon, cut the flesh and remove the bones. Fold the watermelon pieces into a blender.
Step 2/6
Wash the pepper, remove the seeds, cut into medium-sized pieces and also put in a jug of blender.
Step 3/6
Add the garlic, roughly chopped onion, basil leaves and butter. Squeeze the juice from half the lime into the blender jug (or adjust the amount to your taste). Chillies can also be added to this soup.
Step 4/6
Soak the baguette/ciabatta in water, squeeze and add to the blender.

Punch everything together until smooth. Salt to taste and desire (but taste first, you may not salt).
Step 6/6
Pour into plates, garnish each portion with basil leaves and serve.
