Frittata recipe
Ingredients for 2 servings
eggs
4 pcs.
sun-dried tomatoes
30 g
bell pepper
1 pc.
garlic
1 clove
white onion
1 pc.
anchovies
10 g
olive oil
2 tbsp. spoons + for lubricating the mold
freshly ground black pepper
pinch
oregano
pinch
basil

Step 1/6
Chop the bell peppers and onions into medium-sized pieces. Peel the garlic, crush the clove with the back of a knife and finely chop or pass through the press.

Preheat a frying pan with olive oil, put pepper, onions and garlic in it and fry for 4-5 minutes until golden brown, stirring occasionally. Add a pinch of black pepper and oregano, mix.

Beat the eggs with a fork.

Cut the dried tomatoes. Anchovies can also be sliced at will. Add anchovies to taste. If you love, put the amount indicated in the recipe or a little more, if you do not really like or consider them too salty, add less or do not put at all. If you don't add anchovies, salt the frittata a little to taste.

Pour some olive oil into the roasting tin. Put pepper and onions, dried tomatoes, anchovies in it and pour beaten eggs. Bake in the oven at 180C until the eggs are cooked (for about 15 minutes).

Serve the frittata with fresh basil and baguette.
