Recipe "French onion soup"
Ingredients for 2-3 servings

Step 1/10
Put the beef ribs in a heavy-based saucepan, add the garlic cloves cut in half, a little olive oil and fry until golden.
Step 2/10
Cover with water, salt, bring to a boil, reduce heat and cook until tender (about an hour). The broth should boil to about 900 ml.

Peel the onion and cut into rings.

Melt the butter in the pan, add a teaspoon of sugar and bay leaf. Add the onion and fry over a low heat for about 30 minutes.

Pour a glass of wine into the onions and evaporate over high heat .

At the end, turn down the heat and add a tablespoon of flour.

Strain the broth and pour into the pan to onions. Warm, stirring, for another 10-15 minutes.

Cut the baguette into pieces, put on a baking sheet lined with parchment.

Brush each piece with olive oil, top with a slice of cheese and bake at 180C until the cheese melts.

Serve the onion soup hot with the hot cheese toast.
