If using frozen trout steaks, defrost them. Wash broccoli, disassemble into inflorescences. Place in a bowl.

Grate the onion on a fine grater, add to the broccoli.

Pour black ground pepper, salt, olive oil, mix well.

Line a baking sheet with parchment, lay out the prepared broccoli florets and trout steaks.

Make an oil sauce: pour 1 tbsp. l. olive oil, add 2/3 tsp salt, 1/6 tsp ground pepper, mix.

Brush the trout steaks with the prepared butter sauce. Bake in an oven preheated to 180 ℃ for 10 minutes.

While the fish and broccoli are baking, make a sorbet-based glaze. Grate the lemon zest on a fine grater into a bowl. Pour in black pepper, olive oil.

Add a little melted sorbet (25 g), oregano and 1/3 tsp salt. Mix until components are connected.

Make the sauce. Put 125 g of sorbet in a glass of blender, add fried onions, soy sauce and mix everything together with a blender.

Brush the baked fish with sorbet-based glaze and bake for another 4-5 minutes at 180 ℃.
