The trout is so tender and delicious on its own that it doesn't need pickling, if you wish you can hold it for 15 minutes in cognac for extra flavour - that will be enough.

Ingredients for 4 servings
Trout steak
Squash
Bell peppers
Olive oil
Salt

Let the coals in the grill burn through and turn to white ash .
Step 2/4
Put the prepared trout (properly thawed and dried with napkins) on the greased grill grill, add the courgette cut into thin circles and pieces of bell pepper, close the grill.

Grill, make sure there is no flame, cook for 3-5 minutes, then turn the grill and cook for a further 2-3 minutes.
