Ingredients for 2-3 servings
turkey breast fillet
500-600 g
dried apricots
100 g
fried almonds
30 g
butter 82.5%
30 g
apple cider dry
100 ml
ground coriander

Step 1/6
Soak dried apricots in cider for 2-3 hours. Remove the butter from the refrigerator and let it melt.

Grind the dried apricots in a nut blender, combine with the softened butter.

Place the breast fillet on a board and open the incisions with a sharp knife into the layer.

Salt, pepper and sprinkle with coriander. Put the filling of dried apricots on half the layer, cover with the other half and stab with wooden skewers or tie with twine.

Pan-fry the fillets until golden brown on both sides.

Then transfer to a baking dish, pour in the remaining cider from the dried apricots, cover with a sheet of foil and bake at 180S for 35-40 minutes.
