Dyuryum is a popular Turkish street food: a thin unleavened pita bread, in which a variety of fillings are wrapped. Unlike the usual shawarma, durum is always served with a neat, closed roll - it is convenient to take it with you and eat on the go.

Armenian tandoor pita bread

Step 1/10
Cut the chicken fillet across and fry in vegetable oil on both sides for 1 minute.

Rub the chicken with a mixture of 30 g of tomato paste, oil, garlic, cilantro and black pepper.

Put the fillet in the baking sleeve and put it in the oven for 8-10 minutes, preheated to 180 degrees.

Fry tomato paste in butter until dark red.

Mix water, thyme, salt, black pepper, sugar and starch.

Pour the resulting mixture into tomato paste. Warm the sauce until thickened and cook for another 3 minutes.

Brush the pita bread with the sauce on one side and start frying it in the pan.

When the crust is crisp, brush the pita bread over the top with extra sauce and flip. Keep frying until the other side is crisp too.

Make the fries. Cut the gherkins and chicken fillets into thin longitudinal slices, and the tomatoes into circles.

Put all the prepared ingredients on one edge of the pita bread, add the mayonnaise and wrap in a tight roll.
