Dorada Mediterranean Recipe
Ingredients for 2 servings
pink dorada

large tomatoes

olives

Peel and disembowel the pre-thawed fish, dry with tissues, rub with salt and pepper and place in an olive oil-greased roasting tin.

Cut the tomatoes into cubes, mix with olives. Olives can be used without seeds, such a dish will be more convenient to eat, but small olives with seeds are much more fragrant.

Finely chop the lemon, garlic and parsley, add to the tomatoes and olives, salt everything and mix.

Put the resulting mixture on fish, pour olive oil and bake in the oven at 180 degrees for 25-30 minutes until tender. Serve with fresh bread and light white wine.
