dorada chilled
1 pc.
Ramiro pepper
1 pc.
pineapples †. rings in pineapple juice
100g + 100ml juice
onion red
1/2 pc.
parsley
1 tbsp. spoon
garlic
3 cloves
lemon

tomato paste
3 tbsp. spoons
refined sunflower oil
2 tbsp. spoons
apple vinegar 9%
1 tbsp. spoon
soy sauce
2 tbsp. spoons
onion green
Step 1/4
Preheat the oven to 180C. Brush the peeled fish lightly with oil on both sides, cut the skin on the back crosswise. Place on a baking sheet or rack and bake for 20 minutes.

Chop garlic into plates, chop ginger into strips, onions, peppers and pineapples.
Step 3/4
Preheat vegetable oil, fry onions, garlic, ginger over medium heat until soft. Add the peppers and pineapples and stir-fry over a high heat for a couple of minutes. Add the tomato paste, vinegar, soy sauce and pineapple juice to the pan. Cook over high heat for a couple of minutes, until the sauce thickens. Taste and, if desired, add salt, sugar or vinegar - the sauce should be moderately sweet and at the same time sour and salty. Remove from the heat and add the finely chopped parsley.
Step 4/4
Serve the whole fish with the sauce, lemon wedges and fresh green onions.
