Recipe from our customer Tatyana Balakireva from the social network VKontakte. "I want to share with you how I cook homemade cottage cheese - not simple, but with walnuts," writes Tatiana. - It cooks quickly and is very similar to semi-hard cheese, and not the soft curd that we are used to seeing it. It is also tasty, with a touch of nut spice and very useful, as it is made with your own hands and you know exactly what products ."

Recipe "Homemade cottage cheese"
Ingredients, serves 8
curd of formation
350 g
milk
350 ml
walnuts (kernels)
30 g
butter
20g + to lubricate the mould
soda
0.5 tsp
salt
0.5 tsp or to taste
Step 1/8
Combine cottage cheese and milk in a saucepan, put on low heat.
Step 2/8
Fry the nuts in a dry pan for 5 minutes, stirring occasionally. This will give them a crunch and enhance the pleasant nutty aroma. Chop with a knife.
Step 3/8
When the serum separates in the saucepan and the mass becomes hot, remove from the heat. No need to boil!
Step 4/8
Put the contents of the saucepan on a sieve or gauze. Using a spatula, squeeze the cottage cheese so that the entire serum is glassy. It is not required in this recipe, but it can be used to prepare other dishes, for example, pancakes or pancakes.
Step 5/8
Transfer the cottage cheese to a bowl, add the softened butter, salt and soda.
Step 6/8
Place the bowl in a water bath. Stir the contents until smooth, which will take about 10 minutes. While continuing to stir the cheese with a spatula, gradually add all the nuts. When the mass is homogeneous and viscous, remove from the steam bath.
Step 7/8
Brush the container inside with butter. Transfer the cheese mass into it and flatten with a spatula. While the mass is warm, it fills all voids well. Wrap the tin with cheese in cling film or cover. Refrigerate to stabilize for 6-8 hours.
Step 8/8
Remove the finished homemade cheese from the mold and serve on sandwiches with a piece of butter or on a baguette with pear and honey. And it is also ideal for a cheese plate and can be safely given even to young children.
