Recipe "Homemade ravioli with tofu "
Ingredients for 2 servings
For the test:
wheat flour, v/s
150 g
water
75-85 ml
salt
0.5 tsp
extra virgin olive oil
1 tsp
For the filling:
tofu "Classic"
150-200g
lime
1 pc.
parsley
1 handful
basil
1 handful
extra virgin olive oil
1 tsp
salt

to taste
Step 1/5
Mix the flour with salt. Make a well in the centre of the slide and add the olive oil, then the water. Start gently mixing the flour with water with a spoon or fork, then with your hands. The dough should turn out soft, if necessary, add water. Thoroughly knead the dough with your hands so that it becomes smooth and elastic, it will take 8-10 minutes. Wrap the dough in a film and put in the refrigerator for half an hour.

Finely chop the greens for the filling. Mash tofu with a fork into small crumbs. Mix together the tofu and greens. Add grated zest and lime juice, salt and black pepper.

Remove the dough from the refrigerator, roll out into thin sheets using a dough machine or a regular rolling pin.

Divide the sheets into two parts. Put the filling on one part with a teaspoon after short distances (leave a little filling to serve). Brush the boundaries between the filling with water, cover with a second layer of dough, press the dough joints with your fingers and cut into squares of ravioli. Press the dough tightly around the edges, you can additionally go along the contour with a fork.

Boil the ravioli in boiling water for 2-3 minutes. Serve sprinkled with the remaining mixture of lime tofu and herbs, seasoned with black pepper and drizzled with olive oil.
