This tender dessert is good in itself on a summer day, and will also perfectly complement cottage cheese casserole or cheesecakes as a sauce.

Recipe "Dessert from apricots and passion fruit with cream "
Ingredients for 3-4 servings
apricots
5 large or 10 small
passion fruit
2 pcs.
agar-agar
5 g
cream 33%
300 ml
sugar
2-4 tbsp. l.
mint
for decoration (optional)
Step 1/6
Put the passionfruit flesh in the ladle.
Step 2/6
Add the sugar and agar agar.
Step 3/6
Pour in 150ml cream and place on the hob. Heat over medium heat, stirring constantly with a whisk to dissolve the agar.
Step 4/6
Peel the apricots, cut and put in a jug or a glass of blender. Pour in 150ml cream and chop until smooth. If you have not very sweet apricots, you can add another 2 tbsp. l. sugar.

Add the apricots and cream to the passion fruit base and mix well with a whisk until combined. Pour the resulting mixture into molds and put in the refrigerator for at least 4 hours, as much as possible. If serving, garnish with mint if desired.

The colour of the dessert will depend on the variety, colour and degree of ripeness of the fruit you use. Optionally, you can add a little juice or cranberry puree to get a different shade.
