Recipe "Black dumplings with beef and chicken hearts"
Ingredients for 8-10 servings
wheat flour
300 g + a little more for subsided
activated carbon tablets
15 pcs.
warm water
300-400 ml
yolks
5 pcs or 100 mL
salt

1 pack (360 g)
broiler chicken hearts
200 g
onions
1 pc.
cream 20%
50 ml
water
100 ml
vegetable oil for frying
2 tbsp. l.
salt

ground black pepper
to taste
ground paprika

Step 1/10
Break through the tablets in a coffee grinder or blender until dusty and cover with warm water for half an hour.
Step 2/10
Mix flour and salt with yolks, then add charcoal water, knead the dough, wrap it in a film and let it rest in the refrigerator for at least half an hour.

For the filling, cut the onions into thin half-rings and fry in vegetable oil until golden brown.

Add the hearts to the onion and continue to fry for another 5 minutes.

Then add cream, water and simmer under the lid for 20-30 minutes.

Roll the hearts and onions through the fine grate of the meat grinder and cool.

Mix the resulting filling with minced meat and spices.

Dust the work surface with flour and roll the dough into a thin layer.

Cut 4-5cm diameter mugs out of it and mould dumplings.

Cook the dumplings in salted boiling water for 5-6 minutes after surfacing.
