Step 1/6
For the biscuit, beat the egg in a bowl with the sugar and a pinch of salt until fluffy (about 8 minutes). Heat the milk to 50C and add the cooking oil. Mix together the flour, starch and soda. Combine part of the egg mass with milk and oil, then return to the total mass. Add dry ingredients through a sieve, gently mix. Pour the dough into the ring and bake at 155 ° C for 22-24 minutes.

For the cheese base, whisk together the yolk with a pinch of salt. In a saucepan, heat 20g of water with sugar until syrup. Melt the cream and powder in a water bath. Pour the syrup into the yolk, whisk until fluffy. Soak the gelatin, then dissolve and add to the mixture. Add kremchiz, lemon juice and zest, mix. Whisk the cream with the milk and carefully introduce into the mass.

Assemble the cheesecake: cut the base out of the finished biscuit and place in a ring with a film, pour the cheese base, level and put in the freezer for 3-4 hours.

For the glaze, combine raspberries, strawberries and water in a saucepan. Mix the dry ingredients and add to the puree. Cook for 4-5 minutes, stirring constantly. Add the lemon juice and loose gelatin. Cool to room temperature and refrigerate for 1 hour to stabilize.

Heat the glaze to 42-45C. Remove the cheesecake, line the corner and pour over the icing.

Garnish with berries, pistachios and white chocolate.
