Then drain the resulting liquid (it can be used in sauces). Place the courgettes on dryer trays and leave to dry for 12 hours at 40 ℃. If you do not have a dryer for vegetables and fruits, you can put zucchini in the oven with the "Ventilation" mode at a temperature of 50 ℃.
