Lobio is a great way to diversify your meatless menu! In the classic version, lobio is made from dry beans, but I suggest using beans in a jar - this will greatly speed up cooking, and celery and spicy greens will add aroma and freshness.

Ingredients for 2 servings

beans in their own juice
1 bank
carrots
1 pc.
celery petiole
1-2 stems
leek - white part
onions
1 pc.
walnuts
50 g
adjika spicy
1-2 tbsp. spoons
young garlic
1-2 cloves
cilantro and basil
large bundle
salt
freshly ground black pepper

Peel the onions and carrots, cut into small cubes and fry in vegetable oil until soft.

Cut the leeks into rings, dice the celery, add to the pan, cook for a further 2-3 minutes.

Open a can of beans (do not drain the liquid), mash the beans with a fork into a smooth mass, leaving part of the beans whole .

Spoon the beans over the vegetables, add the adjika, stir and cook for another minute .

Grind walnuts together with garlic in a blender until fine crumb, add to the pan, mix, at the end add chopped greens, salt, pepper to taste.

Fragrant lobio is done! Delicious both hot and cold, as a snack.
