For sponge with a whisk, mix warm milk, 2 tablespoons of flour, yeast and a tablespoon of sugar. Leave in a warm place for half an hour.

Add flour, remaining sugar, eggs and softened butter to the dough. Knead the dough for about 5-6 minutes - it should turn out soft and elastic. Leave in a warm place for 1.5 hours.

For the filling, pour water over the poppy seeds so that 4-5 cm of liquid is on top. Simmer for about 30-40 minutes, removing the films. Then pour cold water, transfer to a fine sieve or gauze and squeeze to completely remove moisture. Grind the poppy seeds in a blender for 2-3 minutes.

Add sugar, vanilla, lemon zest, protein and softened butter to the poppy seeds. Stir and refrigerate until used.
