Dice the pumpkin and bake in the oven for 20 minutes at 180C. This can be done in advance and store the baked pumpkin in the refrigerator for 2-3 days.

To prepare salsa, cut mango and red onion into small cubes, add finely chopped cilantro, mix.

Peel the hard stems, roughly chop the leaves and massage them with your hands. Season with a little olive oil.

To make the dressing, mix the olive oil with the juice of half a lime, add the chopped cilantro stalks.

Put cale, beans, corn, baked pumpkin on a plate. Top with the salsa. Decorate the bowl with cilantro leaves, season with salt and pepper. Serve the finished bowl with dressing and a wedge of lime.
