Recipe "Meringue with cocoa nibs "
Ingredients for 6-8 servings
eggs ( squirrels only)
2 pcs.
white sugar
100 g
crushed cocoa
50 g
Step 1/5
Preheat the oven to 130 degrees, as the whipped proteins quickly fall off.
Step 2/5
Use clean and completely dry dishes and whisks for whipping.
Step 3/5
Beat the whites with a mixer or blender, but only with whisks, not knives .
Step 4/5
Carefully separate the whites from the yolks, the yolks will not be needed. Place the squirrels in a large dry bowl, beat with a mixer at maximum power until stable peaks, then pour in the sugar (it is advisable to use finely crystalline white sugar) and beat until dense and glossy.
Step 5/5
Pour cocoa nibs into the finished mass and gently mix in a few movements (do not stir for a long time, otherwise the proteins will fall off). Spoon the future meringues onto a baking sheet, immediately put in a preheated oven, bake for 1 hour. Bon appetit!
