These meat pies, popular in Bashkiria and Tatarstan, are familiar to many from childhood. In our recipe - the same whites: with a crispy golden crust, air dough and a generous portion of juicy meat filling. It is good to serve strong broth, sour sauce or just a cup of fragrant tea.

Recipe " Belyashi"
Ingredients for 7-8 portions
For the test:
wheat flour, v/s
300 g + a little more for subsided
warm water
185 ml
sugar
5 g
egg CO
½ pcs.
salt
5 g
vegetable oil
10 ml
yeast dry
2/3 tsp
For the filling:
minced beef and turkey
1 pack (400g)
onion red
1 pc.
chili pepper
1 pod
salt
to taste
black pepper
to taste
milk 3.2%
60 ml
vegetable oil for frying

Step 1/10
For the dough in warm water, dissolve the sugar, pour in the yeast, cover the bowl with a towel and leave for 10-15 minutes. Then add the egg and salt to the resulting sponge.

Add flour and knead the dough.

Dust the table with flour, lay out and knead the dough. Add vegetable oil and knead again. Transfer the dough to a bowl, cover and leave to approach in a warm place.

After 1.5 hours, lightly wash the dough to oxygenate, cover again and leave to come up for about an hour.

Divide the resulting dough into about 8 parts and form balls from them.

Place them on a chopping board or tray dusted with flour, cover with a towel and put in a warm place for proofing for another 10 minutes.

For the filling, punch the chilli onion with a blender until smooth and combine with the mince.

Add spices to taste and milk.

Flatten each dough ball slightly with your hand, turning it into a small tortilla. Put the meat filling in the center and pinch the edges gently.

Pour the vegetable oil into the pan and heat it. Then reduce the heat to medium. Fry the whites on both sides until golden brown, periodically covering the pan with a lid. Preparation should take about 15 minutes.
