Some people like the combination of french fries with cream ice cream. We went ahead and made yam fries with a zesty ice cream-based sauce. Very unusual, but there is definitely something in it!

sweet potato
3-4 pcs.
corn starch
1 tbsp. l. with a slide (20 g)
salt
3.5 tsp (15 g)
vegetable oil
30 ml
ice cream
150 g
fresh (or ground dry) chilli
1 pcs. (1/3 tsp)
balsamic sauce
20 ml
mint or basil
1 sprig

Peel the sweet potato. Cut into roughly 0.5-1cm thick strips and place in a bowl.

Add 2-2.5 tsp salt, mix.

Add the starch and stir again.

Line a baking tray with baking parchment. Put the prepared yam, grease it with oil. Bake in an oven preheated to 200 ℃ for 20 minutes. If desired, boil the sweet potato in salted water (1 l) over high heat for 4-5 minutes. Dry on a paper towel and cool, then pour in cornstarch, put on a baking sheet and then cook according to the recipe. This is especially useful if you want to cut yams into thicker slices so that they become dry when baked.

While the yams are baking, make the sauce. Finely chop the chilli, removing the seeds from it, and put in a bowl.

Separate the mint leaves from the stems, finely chop and add to the chilli.

Pour over the balsamic sauce. Salt. Stir.

Add a little melted ice cream and mix until the components are combined. If the yam is a little moist after baking, place it on a paper towel. Serve with the sauce, sprinkled with grated parmesan if desired. You can also add 1-2 scoops of ice cream.
