An interesting and easy way to bake eggplant with minced meat and cheese. A big plus of this recipe is that it has only 3 main ingredients. By the way, parsley in this dish can be replaced with cilantro or other favorite herbs .

Recipe "Eggplant, baked with ground beef and cheese"
Ingredients for 2 servings
eggplants
2 pcs.
ground beef
1 pack (360g)
mozzarella cheese for pizza
1/2 pc. (125 g)
salt
to taste
olive oil for frying
1-2 tbsp. l.
freshly ground black pepper
to taste
fresh parsley
a couple of twigs
Step 1/7
Wash the eggplants. Cut in half and place on a parchment-lined baking sheet. On each half, make diagonal notches with a knife, salt to taste, lightly brush with olive oil. Bake for 20 minutes in an oven preheated to 180 ℃. Cover with foil if desired.

Put the mince in a bowl. Salt, pepper to taste.

Cut the greens and add to the minced meat.

Pour 50-100ml cold water into the mince to make it juicier. Mix well.

Remove the baked eggplant from the oven. Trying not to damage the skin, carefully remove the pulp with a spoon, you can cut it if you wish. Save the skin. Add the aubergine flesh to the mince and stir.

Fill the eggplant skin with the resulting minced meat.

Top with the mozzarella slices and bake for 20 minutes in an oven preheated to 200 ℃.
