large eggplant

Punch the nuts together with the peeled garlic cloves in a blender until finely chopped.

Add vinegar or lemon juice and dilute with warm water to a thin sour cream consistency, add suneli hops and salt. Try it, the sauce should be spicy, you may have to add a little more vinegar or juice. Finely chop the cilantro sprigs, leave a few whole to garnish, add the chopped cilantro to the nuts, stir.

Squeeze the eggplant slightly and fry the slices in vegetable oil, lay out on napkins, they will absorb the excess fat. The filling is quite liquid, so it makes no sense to twist the rolls, in Georgia the eggplant plates are folded with an accordion: put the filling on a third of the slice (a little less than a teaspoon), then fold the slice so as to cover the filling, a little more nuts on top, then cover with the rest. Garnish the finished snack with pomegranate seeds and cilantro leaves.
