Bubble Tea is a popular drink, cold tea with tapioca balls in a classic version. And if tapioca is not at hand? You can make balls for dough ti based on starch and mango. And tea, by the way, may well replace coffee.

Ingredients for 4 servings

mango
1 pc.
corn starch
6-8 tbsp. spoons
unrefined cane sugar
3 tbsp. spoons
tea or coffee
250 ml
milk
50 ml
Jerusalem artichoke syrup
1 tbsp. spoon

To prepare balls for dough ti, take the pulp of one ripe mango, sugar and mix in a blender.

Wipe the resulting mixture through a fine sieve.

Transfer the mixture to a bowl, add 3 tbsp. tablespoons cornstarch, mix. Send the bowl to the microwave for 15 seconds (put not the highest power), after 15 seconds mix the mixture again and send it back to the microwave for 15 seconds, then repeat the steps again. Add another 3 tbsp. tablespoons of starch and mix thoroughly. If the dough is sticky, add more starch until it is soft, separating from the hands and kneading easily.

Divide the dough into four, roll up the thin sausages, slice and roll up the balls with your hands.

Boil the balls in boiling water for 20 minutes, remove from the heat and leave in water for another 10 minutes.

Make tea or coffee, add syrup to taste. Pour balls into a tall glass, add a drink, pour in milk. Bubble ti is ready. (The proportions of tea/coffee/milk can be changed to suit your taste.)
