An unexpected version of avocado toast - with watermelon radish. The islet root vegetable refreshes the overall taste and crunches appetisingly. And radish is very useful and looks beautiful in the company of green avocado.

Ingredients for 3 servings
watermelon radish
1 pc.
avocado
1 pc.
chicken egg
3 pcs.
cereal toast
3 pcs.
microgreens of peas
for decorating
lemon
1 pc.
olive oil
1 tbsp. spoon
salt
to taste
Step 1/6
Cut radish into very thin circles.
Step 2/6
Put in a bowl, squeeze the juice out of half a lemon. Toss the radish with the lemon juice, olive oil and salt and leave for 15 minutes.
Step 3/6
Boil hard-boiled eggs, cool, peel. Cut into thick rounds.
Step 4/6
Mash the avocado flesh with a fork, add a little marinade from the radish and mix.
Step 5/6
Dry the toast in a toaster or in a dry pan.
Step 6/6
Spread the avocado. Top with the eggs and marinated radish. Decorate the toast with microgreens and serve.
