Recipe "Assorted quickly pickled vegetables"
Ingredients for 4 servings
For 400ml jars:
short-fruited cucumbers
4 pcs.
garden radish
5-6 pcs.
daikon radish
0.5 pcs.
bow Crimean
2 pcs.
Additionally for each can:
young garlic
1-2 cloves
black peppercorns
4-5 pcs.
bay leaf
1 pc.
fennel
3-4 small twigs
Marinade for radishes, daikon and cucumbers for 1 can:
apple vinegar 9%
12 ml
boiled water
250 ml
salt
7 g
coconut sugar
7 g
Onion marinade:
apple vinegar 9%
20 ml
Extra Virgin Olive Oil
20 ml
boiled water
100 ml
salt
10 g
coconut sugar
5 g
Step 1/5
Boil the water. Cut cucumbers, radishes, daikon and onions into thin rings. Chop the garlic into chunks. Adjust the amount of garlic to taste - you can take less or refuse it altogether.
Step 2/5
Crush the black pepper a little with a knife. Tear the dill into twigs.
Step 3/5
Fold onions, daikon, cucumbers and radishes into each jar separately. Add the garlic, dill, black pepper and bay leaves.
Step 4/5
Prepare the marinade for each can according to the recipe, mixing all the ingredients well until the salt and sugar dissolve. Pour the marinades into the jars. Mix the onion well with the marinade, as it will not fill the whole jar.
Step 5/5
Cover and refrigerate. After a few hours, the vegetables are already marinated, but it is best to leave them in the refrigerator overnight. This recipe is not for long-term storage, so use vegetables right away - in salads, for sandwiches or as a snack.
