Recipe "Arrachera"
Ingredients for 2 servings
steak machete
2 pcs.
lime
1 pc.
onion red
1 pc.
butter
30 g
fresh chilli
1 pc (or less)
fresh cilantro
bunch
soy sauce
1 tbsp. spoon
olive oil
1 tbsp. spoon
wine
50 ml
freshly ground black pepper
to taste
ground coriander
pinch
cane sugar
1 tbsp. spoon
salt
to taste
Step 1/4
Combine olive oil, lime juice, soy sauce. Add chopped fresh chilli and cilantro stalks, marinate the steaks in this mixture.
Step 2/4
Cut the onions into feathers, fry in butter. Pour in the wine and let it evaporate, then add sugar and simmer for another 10-15 minutes. As a result, the onions will turn out soft, with caramel notes on the palate.
Step 3/4
Fry the meat in a dry pan for 3 minutes on each side. Transfer the steaks to a board or plate, cover with a sheet of foil and leave to "rest" for 10 minutes.
Step 4/4
Before serving, salt the arrachera and serve with the caramelised onions and fresh cilantro.
