Arancini is a traditional Italian snack originally from Sicily. We offer to cook rice balls in the oven instead of deep fat and serve on a spinach pillow, you get a full-fledged hot dish.

Ingredients for 3 servings

cheese "Mozzarella piccolo" soft
120 g
fresh frozen spinach
300g
ground round rice
2 sachets
onions shallot

Boil two bags of round grain rice until ready according to the instructions. Let it cool a little, and then put a layer of 1 centimeter on a cling film.

Put on your gloves. Take a small amount of rice and spread it over the palm of your hand. Put a ball of mozzarella in the middle.

Wrap it in rice and roll it into a ball. Roll in breading and then brush with oil.

Place the resulting arancini on a parchment-covered baking sheet and bake in an oven preheated to 200 degrees for 10-15 minutes - until brown.

While the arancini is cooking, finely chop the shallots and season in the pan. Add the thawed spinach and cook over a medium heat until the liquid has evaporated. Pour in the cream and simmer the mixture for another 5 minutes.

Place the spinach on a plate and top with the hot arancini.
