Achma rightfully occupies an honorable place in Georgian cuisine along with khachapuri. This is also a cheese pie, only it has many layers of dough, each of which is generously sprinkled with suluguni, Imereti cheese or a mixture of different cheeses. To make the filling more tender, we also added matsoni to it.

Heat the water a little, add ½ tsp. Salt, mix, add eggs and stir until smooth.

Pour portions of flour and mix with a whisk. First, add a little 500 g of flour and, if necessary, gradually add up to 200 g - the exact amount will depend on the quality of the flour, water, humidity, etc.

Knead the dough, which will not stick to your hands. Put the dough in a bag and refrigerate for about 30 minutes.

Grate suluguni and Adyghe cheese on a coarse grater. Add the matsoni and stir. Melt the butter. Brush a square or rectangular baking dish with a little oil.

Divide the dough into several equal pieces. Stretch a piece of dough with your hands into a very thin translucent layer, put in a mold, brush with butter, sprinkle with cheese.

Next - again a layer of dough, butter, a layer of cheese, and so on until the dough and cheese run out. The last layer is necessarily cheese. If there is a little butter left, it's not scary - they can pour the cake in the middle of baking.

Put the cake tin in an oven preheated to 180 ℃ and bake until tender for about 30-40 minutes, navigate your oven. If butter remains, carefully remove the cake from the oven halfway through cooking, pour over the butter and continue baking.
