How do shen pu'er and shu pu'er tastes differ?

The shen pu'er treatment steps involve withering, twisting, and drying the leaves to allow for subsequent fermentation, and shu pu'er is further twisted and starts microbial fermentation in wet heaps.
And shen and shu puers have high tonic properties, only raw gives a light infusion with light acidity and sweet-honey notes in the aftertaste, and mature is distinguished by an infusion of dark color with some heaviness and velvety taste and is characterized by shades of & laquo; earthy taste & raquo;, sometimes with aromas of smoke or dried fruits, but without sweets.

Correct brewing of puers
Puree tea can be delivered loose and in molds.
If you have pressed tea, the initial task is to carefully separate fragments with minimal damage to dry leaves.
Use a special knife or awl.
For one serving of tea, you need to take about 4-5 grams of brew per 150 ml of water. Water temperature should be high, but not boiling:
- For young shen puer & ndash; up to 90 degrees;
- For aged shen pu & ndash; up to 95 degrees;
- For shu pu - up to 98 degrees.
Due to the fact that puers can be stored for a long time, and, accordingly, covered with dust, it is recommended to pre-rinse the brew with boiling water.
From the second brewing, the drink is ready for consumption.
The young shen, if you overexpose time, will give strong bitterness, so the first two brews are aged only 3-5 seconds.
Next, each exposure (up to 8-10, if the puer is of high quality) is extended by 15-20 seconds.

Expert Opinion
The large amount of essential oils in the puera makes the aroma of tea rich and persistent, so it is better to use ceramic or glassware for tea drinking. Clay kettles and gaivani are not suitable, because porous walls retain and accumulate a puffy smell, reproducing it during subsequent brewing.
