Groups and their differences
The Chinese identify seven groups of Chinese teas:
-
Yellow;
-
Oolong Tea & nbsp; (Oolong);
-
Пуэр.
Crops for each group of Chinese teas are harvested from a specific type of tea bush. There are more than 250 varieties in this country. However, the main difference between the groups is the methods and steps for processing tea leaves.
Consider each group individually.
Features of each group
-
Green tea . Bright floral aromas and the deepest pleasant taste of each variety of Chinese green tea are known around the world. The raw materials are subjected to minimal processing, due to which the tea is less fermented. The drink contains a lot of vitamins, amino acids and pectins, slowing down the aging process.
-
White tea . It grows in several provinces of China. Raw materials in the form of tea buds with white pile are collected from a certain type of bushes and only dried in the sun, without undergoing any types of processing. The drink has a delicate taste with floral, fruit and honey notes, a subtle aroma with a pleasant aftertaste, and also has a lot of useful properties.
-
Oolong (Oolong) . A huge group of weakly fermented tea. They are grown and produced on the southern plantations of China. Oolong tea is dark and light. After collection, tea leaves are roughly processed, fried in a hot oven (light appearance - less, dark - longer), stopping the oxidation process, then sorted out for a long time. Oolong have a bright, fresh and rich taste.
-
Red tea . Red tea in China is considered the one that we used to call black, because of the burgundy color of the infusion. However, Chinese tea is very different. To make this highly fermented Chinese tea, the collected raw materials are dried in air, then in a centrifuge, then processed in a roller. The leaves completely lose moisture. Then the tea is dried in special baskets under the cloth and in drying cabinets. The infusion of Chinese drink is incredibly beautiful and has a deep velvety aroma.
-
Black tea . The raw material is subjected to rough mechanical processing, after which it is fermented for tens of hours. Then completely black tea is dried and pressed. The drink with brown dark infusion has a tart, spicy, smoky aroma with notes of fruit. It is rarely found on the Russian market.
-
Puer Tea . There are two types - puer shen (light), puer shu (dark). Grown and made in the famous tea province of Yunnan. Large tea leaves are processed, then pressed in the form of a pancake, tile, etc. It also happens in loose form . Pu'er shen is aged for several years after processing, making it darker and denser. It has a light golden tint, the taste changes depending on the aging time, changing floral shades to honey and dried fruit. Puer shu has a dark, heavier, but mild taste. To make it, the processed raw materials are artificially stimulated for several months to accelerate ripening, while maintaining natural qualities.
- Yellow tea. It is considered an elite drink for which tea bushes are grown in five provinces of China, each of which makes its own yellow tea. It is made from dense and intact bush buds, which are dried and languished, keeping in a dark cool place for several days. This makes the drink taste incredibly soft and deep.
