Shu Puer and its features
This type of puer, also called & ldquo; ripe puer & rdquo;, began its history in the 70s of the last century.
It is distinguished by a special production technology, and one of the stages of manufacture is called & ldquo; wet heap & rdquo;. What does this mean, we will understand further.
Tea production steps Shu Puer :
-
the top 3-4 leaves from tea trees and bushes are collected manually;
-
then the collected raw materials are laid out in the open air, where they are dried naturally under the sun;
-
Mao Cha raw material (raw tea) is made. The point of this step is to stop the fermentation process while maintaining maximum beneficial properties in the tea leaf. To do this, the raw materials are dried, evaporated or roasted;
-
wet skirting is the next stage of production. Thanks to this stage, post-fermentation of tea leaves, which under natural conditions of manufacture would last 20-30 years, is accelerated to 1 year. Raw materials are placed in a dry ventilated room, laying it out in heaps. The shapes and sizes of such heaps may vary. They are watered and covered with cloth. The process of cheating is monitored by technologists - strict observance of a certain temperature and humidity is necessary. They also determine the duration of this stage. It can last a month, or it can last for a year. Heaps mix from time to time;
-
upon completion of the skirting step, the raw materials are subjected to additional drying in the open air to fix the result and finally stop the fermentation process. Leaves turn dark;
-
The finished raw materials are separated and different subspecies of shu pu'er tea are prepared, leaving them loose or pressed into pancake, brick, nest, mushroom, medallion and other interesting forms.
Shu Puer's dry brew is usually dark brown, closer to black. The infusion also turns out saturated dark. The taste is tart, woody, and the aroma with notes of moist earth and smoke.

Shen Puer Features
Production of Shen Puer is somewhat different from the manufacturing process of Shu puer. The manufacturing process begins with the collection of raw materials, which is then immediately dried or dried in the sun to stop the unwanted spontaneous oxidation process.
The next step is the most important - fixing the greens. Redox processes in tea leaves are stopped here. To do this, the leaves are exposed to high temperatures, for example, roasting with careful mixing. Then the leaves are twisted and shaped.
After that, the tea is finally dried on special decks for several hours in the shade, in well-ventilated rooms. Thus, it turns out loose Shen Puer . The entire described process, from leaf collection to final drying, takes no more than 1 day.
The tea is then steamed to make the leaves pliable and pressed into the desired molds which are finally dried and stored on racks. The longer such tea is stored, the more valuable it is. Each mold is then wrapped.
In appearance, Shen Puer can be light pale green or green brown. Infusion when brewing turns out to be light. The taste is bright and fresh, with shades of dried fruits.
