Mexico grows exclusively arabica.

Coffee from the state of Oaxaca is sold mainly under the generalized names Oaxaca and Oaxaca Pluma. It gives an infusion of good saturation with a nutty tang.
The southernmost state, Chiapas, supplies the Tapanchula variety, produced in the mountains in the southwest of the country on the border with Guatemala.
In the same state, several varieties of the so-called "organic coffee" are grown, that is, coffee obtained without the use of pesticides, herbicides and other chemical agents.
Many coffee experts believe that it is in Mexico that the world's best coffee varieties with large beans, the so-called Elephant Beans, are obtained.
Coffee, known as Maragogype, is characterized by giant beans that provide a soft, aromatic drink.
In Mexico, this variety is known as Liquidambar.
The quality of Mexican coffee is evaluated by the height at which the coffee trees are grown (as in many other Latin American countries), as well as by the appearance of the beans:
- Strictly High Crown (SHG) — the best grains collected from mountain plantations;
- High Crown (Altura), Prime Washed (Prima Lavado) - especially good grain taste and appearance;
- Good Washed (Bueno Lavado) — good quality grains.
In general, good Mexican coffee is not among the world's best varieties, as it often lacks saturation and extractiveness.
But if you increase the dose of brewed coffee, you can get real pleasure from it.
