Different types of tea require different brewing types!
There are seven types of tea in the traditional Chinese classification:
- белый чай
- yellow tea
- green tea
- oolong (oolong) tea
- red tea
- чёрный чай
- пуэр
Each tea category differs in the degree of fermentation of the tea leaf, as well as the type of treatment used to obtain subcategories.
Because tea leaves have different degrees of oxidation, this dramatically affects the taste and brewing characteristics.
Tea of the weakest degree of processing must be brewed with water at a temperature of no higher than 80 degrees, then the tea infusion is enriched with all the flavors that are in tea.
But teas of a strong degree of processing at low temperature, on the contrary, will not give their taste to the infusion.
Therefore, when brewing different types of tea, there are recommended temperature modes for brewing:
- WHITE TEA - 1 tsp/200ml/60-65 degrees/2-3 min
- YELLOW TEA - 1 tsp/200ml/65-70 degrees/2-3 min
- GREEN TEA - 1 tsp/200ml/70-75 degrees/3 min
- OOLONG TEA - 1 tsp/200l/80-90 degrees/4-5 min
- RED TEA - 1 tsp/200ml/90 degrees/4-5 min
- BLACK TEA - 1 tsp/200ml/95-100 degrees/4-5 min
- UER - 5 g/200 ml/95-100 degrees/1-5 min.
A rather strong time discrepancy in the Puer category is associated with varieties of Puers: Shen Puer as a more delicate variety is brewed for 1-2 minutes, while Shu Puer requires a longer brewing period of 3 to 5 minutes.
