The popular South American mate, although not so long ago known in Russia, has already managed to fall in love with the population as an unusual tasty drink, which, moreover, invigorates no worse than coffee.

And if you look a little deeper at mate tea from the point of view of composition, it becomes clear that it stimulates the body even better than coffee, without having side effects in the form of increased stress and heart rhythm disturbance.

What is mate tea made from?

The Paraguayan holly, native to Paraguay, Uruguay and partly Brazil, Peru and Bolivia, is an evergreen shrub.

Under natural conditions, its height can reach 15 meters, but on agricultural plantations the bush is cut, leaving a height of no more than 2 meters.

Holly has spreading branches with large leaves, young processes of which go to make a drink.

Branches up to 40-50 cm long are dried and crushed fractionally.

Mate has been drinking for several millennia, and previously the whole process involved drying under the sun and grinding raw materials with millstones.

Now high-temperature furnaces and cutting machines are installed on plantations & ndash; preparation of yerba mate (mate grass) takes no more than 1 day.

In the dry form, mate tea looks like a light brown heterogeneous mixture in which both dust and large fractions are present.

Do not rush to reject brewing in which there is a fine powder: if its content does not exceed 15-20%, this indicates that the raw materials are of high quality and thoroughly dried.

Large pieces & ndash; these are crushed branches, and fragile particles & ndash; these are dried leaves.

How to tell if your tea is in good condition:

  • The color of the mixture should be uniform light brown, without inclusions of dark or red;
  • The smell of the mixture should be pleasant, reminiscent of dried hay or grass, without shades of mold, mustiness, delicacy;
  • Each batch of mate may differ slightly in color & ndash; be slightly lighter or darker, greener or more golden: if several shades prevail in one mixture at once, then, most likely, several different games were mixed. This is not very good, because the unique taste of the drink can be lost.
