Just like green tea differs from black or yellow, so does pu & ndash; this is just one type of tea bush.

Biologically, there is only one type of tea plant, Camellia sinensis, and the rest is & ndash; these are its varieties, species and agrotypes. It is they who determine the characteristic properties of a particular tea variety.

Puer tea is made from flushes or leaves of tea trees growing in only one region & ndash; Yunnan Province of China, in the region of the Six Famous Tea Mountains.

Subtropical humid climate prevails in this region, so wild tea trees grow up to 20 meters or more.

Some plants are up to 500 or even 1,000 years old, and they still produce growing shoots that allow you to shoot up to eight crops per year.

PU technology

In addition to harvesting from endemic tree species, pu'er differs from classic tea in its leaf processing method. There are two varieties of puer & ndash; shen (raw) and shu (mature).

The treatment of leaves for shen puer is minimal: they are withered, twisted for fermentation, dried, steamed and pressed & ndash; unique drying technology does not completely stop oxidation, but only slows it down.

Shen pu'er can be stored for an unlimited number of years, subject to proper storage conditions. And over the years, the taste of young sour pu'er with bitterness becomes mature, acquiring deep multifaceted shades.

Shu pu'er is processed to complete fermentation by wet scrubbing. After withering, twisting and easy drying, tea leaves are placed in a thick layer on pallets or even on the ground, sprinkled with water.

High humidity and hot air accelerate leaf burning and the proliferation of microorganisms that accelerate darkening and fermentation of leaves.

The skirting can take up to a month and a half and only an experienced technician determines the completion point of the Vo Dui process. The leaves are then bagged or pressed into molds.

Post-fermentation also continues in shu puer, only much weaker and slower, preserving the original taste of artificially aged tea, but making it slightly denser and more velvety.
